Salt and Vinegar Purple Sweet Potato Chips

INGREDIENTS

1 medium sized Hawaiian sweet potato
1 tablespoon of vegetable oil
1 tablespoon of white vinegar
A pinch of sea salt flakes                         

 

 

 

 

 

 

 

 

 

METHOD

Preheat the oven to 150oC (fan-forced).

Using a vegetable peeler, peel the skin off the sweet potato.

Slice the sweet potato into thin circles using a mandolin slicer.

Place the sliced sweet potato into a mixing bowl with the vegetable oil and toss to coat.

Line 2 baking trays with baking paper and distribute the sweet potato between the trays making sure no pieces overlap.

Place in the oven for approximately 30 – 40 minutes, swapping the trays over halfway through, until lightly golden brown. Depending on the strength of your oven and thickness of the chips, cooking time may vary.

Drizzle the vinegar over the chips and sprinkle with salt. Remove from trays and serve.

 Tip If you can’t find Hawaiian sweet potato, use regular sweet potato.

 Tip Try this recipe with other different seasonings – try it just with salt and pepper (served with a side of guacamole), or even lime and cracked black pepper.
