This spritz really is one in a melon.
- 25g sugar
- 1/8 watermelon
- 30ml gin
- 15ml Campari
- juice of 1 lime
- CAPI Soda
- lime wedge, to garnish
- Stir sugar into 15ml boiling water to dissolve. Place sugar syrup in freezer for a few minutes to chill.
- Blend watermelon flesh, sugar syrup, lime juice, Campari and gin in a blender until smooth.
- Strain through a sieve into a wine glass.
- Fill glass with ice and top with CAPI Soda.
- Garnish with a fresh lime wedge.
